Citrus Blueberry Muffins
Ok, but who doesn’t love a way to make a fun, munchie treat WITHOUT loading it down with yucky ingredients? I think we so often fail to realize that the products marketed to us as “safe” are some of the most detrimental items we can put into our bodies. Foods are fabricated and drenched in chemicals to elongate their shelf life. This makes shopping today seriously SO difficult. You have to read ALL the ingredients on an item before you place it in your cart, just so that you don’t end up with an item that may have petroleum or formaldehyde in it (scared face emoji). Y’all, this was not how it was for my parents generation or the generation before them. They didn’t have to worry about whether or not milk was actually milk. Now days, we have to be on the look out. Anyways, I didn’t hop on here to scare you all, I really just wanted to share that there ARE alternatives, and that those alternatives can be SO SO yummy. :D


A little note on this recipe, it can totally be altered to be exactly what you want. I used all organic ingredients to try and keep it as clean as possible. Also, the apple sauce and banana are optional. I’ve found that you don’t want to throw out both in one batch. They add a level of moisture that make for some killer muffins. So go with either the apple sauce or the banana, or both. 


Citrus Blueberry Muffins Recipe


INGREDIENTS
1 ripe banana
1 egg
1/3 cup coconut oil
1/2 applesauce
1 cup fresh organic blueberries
3/4 cup organic brown sugar
2 drops lemon vitality essential oil
6 drops tangerine vitality essential oil
1 cup YL Einkorn Flour
1 cup organic oatmeal
1/2 tsp baking soda
2 tsp baking powder
1 1/4 tsp salt 
***optional: 1 scoop YL Vanilla Spice Pure Protein Complete


DIRECTIONS
  1. Preheat oven to 350 * F
  2. Combine banana, egg, coconut oil, applesauce, and brown sugar in a bowl.
  3. In a separate bowl mix together flour, oatmeal, baking soda, baking powder, salt and *protein powder*
  4. Gently stir flour mixture into wet mixture and add blueberries, drops of lemon and tangerine essential oils
  5. Fill muffin liners with mixtures
  6. Bake 15-20 minutes on 350*. Makes 12 muffins
